Default Celery Soup

Wow!!, even though I say it myself, I have just made the most delicious celery soup.

Take a head of celery and chop it quite finely.
One v. large potato...chopped
One large knob of butter.
Combine the celery, potato, having melted the butter. Make sure they're all well coated and keep them sauteeing for a few minutes.
Then add about 2 pints of stock (ie two pints of water with two bouillon cubes)
Let the lot simmer for 45-60 mins.
Then push the mix through a sieve. If it's cooked enough then you should have nothing left in sieve. Put back in saucepan, boil quickly and season to taste (salt/pepper)
Serve with a dash of nutmeg on top.

Sounds good! I made a great Broccoli & Stilton soup the other day and just about to have some now! There's something about soup
