Default Lemon cake

You may have seen/made this before but it's a great recipe so deserves repeating.

(you'll have to make the conversions yourselves)

4oz margarine
5oz brown sugar (light or dark)
4oz wholemeal self raising flour
1 egg
grated rind and juice of 1 lemon (or lime)

Grease a 7 inch square cake tin and line bottom.
Melt margarine and 4oz sugar with lemon rind beat in egg then fold in flour. Put in tin and cook at gas 4 (no idea what electric that is) in centre of oven for 25-30 mins until firm to touch. Warm remaining 1oz sugar with lemon jiuce. Prick cake all over with a fork and pour sugar/lemon syrup over cake. Cool in tin then turn out and cut into squares.

Eat and enjoy

Sounds great - might check if I have the ingredients and pop one in the oven! I love lemon cake - had the best one ever in Amsterdam - lemon, goo, sponge, meringue.It was fantastic!

this one is quite a healthy one...yeah...as it's made with wholemeal flour and brown sugar...well that's what I tell myself.

Quite apart frrom that there ain't too much washing up as you melt the sugar and marg in a saucepan and mix the rest in the same pan. Word of advice though...let the sugar and marg cool before you beat in the egg otherwise you get really sweet scrambled egg lol.
