Default Ginger veg

Tired of boring old boiled carrots and peas?
Try this , easy but lush
buy a courgette, leek, mange tout and some root ginger. chop the ginger into small pieces so that you have about 1 to 2 teaspoons when done. The quantity is really up to you. If I'm cooking for myself I perhaps use half a courgette & half a leek. In a wok, stir fry the chopped courgette, leek and ginger for about 4 mins, then add a handful of mange tout and fry for another 1 minute, then it's ready.

I like ginger, wouldn't have thought of using it like that, sounds good

I have to say I've eaten these with all of the traditional roast meats and they are delicious but my favourite would have to be with a nice Salmon fillet and new potatoes
