Does anybody else think that home made chillie tastes better re-heated the day after cooking?
(guess what I'm having to eat tonight)

Yep, couldn't agree more. Same with Spag Bol or Lasagne. Even better if it's been in the freezer for a while. Must give the flavours time to settle and be absorbed!

Leaving any cooked dish such as a casserole, spaghetti bolognese, lasagne or what ever allows the meat and the other ingredients to basically marinade in the stock/gravy which the dish contains. It also helps with further tenderisation of any meat. The only meat which is cooked in a sauce and which I personally don't leave at least overnight before reheating and serving are pork dishes.

Curries are also better if they are held cool overnight. The spices tend to be enhanced. I suppose Chilli could be loosely classed as curry type - or not depending on your opinion. Don't leave boiled rice overnight - it is easily attacked by a fungus which will make you awfully ill - I know this from experience. Cooked Rice - Rushcliffe Borough Council

Thanks for that link Escafeldia I knew there was a reason to be careful with rice but I couldn't remember why. Did you have some "bad" rice at some point?

Chilli definitely better for cooking and reheating next day. I tend to make mine rather wet and have it with French bread and butter (spread of your choice).

I use Chinese chilli bean sauce to 'hot up' mine. I don't have any right now so next time I'm out I will go to my Chinese supermarket and get some so I can tell you the name.

Here in Plymouth there is the most wonderful Chinese supermarket that supplies just about all the Chinese take aways and restaurants in the city and it is an Aladdin's cave of wonderful things.

Oh yes Red you could call it "bad rice" but the local Health Inspectors called it poor food management. It was in one of those Chinese Eat-all-you-Can for £5 places. The egg fried rice went down and within half an hour I was feeling really ill. It took a couple of days for it to wear off. I was really pissed off because I like Chinese food, at least the Cantonese variety.
